fix(iOS): correct malformed generated Info.plist that crashed on launch

GENERATE_INFOPLIST_FILE with INFOPLIST_KEY_UILaunchScreen_Generation
produced a nested "UILaunchScreen" => { "UILaunchScreen" => {} } key and
omitted UISupportedInterfaceOrientations entirely, so the app died
immediately on tap.

Ship an explicit Config/iOS-Info.plist instead: flat UILaunchScreen,
proper orientations (iPhone + iPad), ATS for arbitrary loads,
camera/photo usage strings, and the audio background mode.
